They are of high nutritional value and contain large amounts of vitamin A, minerals (calcium and phosphorus), niacin and carotene. They are rich in water, with a content of around 90%, and so are low in calories, providing an average of 10 to 15 Kcal per 100 gr.
When they are ripe they can be stored in the fridge for 3 to 4 months. There is a wide variety of sweet and savoury recipes using pumpkin. Even its flowers are edible and can be used in salads or battered and fried.
